Biography

Jane is a registered dietitian who specializes in lifecycle nutrition and medical nutrition therapy. Prior to joining the faculty at Syracuse University, she was a clinical site coordinator for dietetics students at California State University of Los Angeles where she placed interns in their supervised practice rotations. She also taught medical nutrition therapy, lifecycle nutrition and sports nutrition. Jane’s past experience includes provision of nutrition care to hospitalized patients as a clinical dietitian, clinical nutrition manager and then as a food service director in several states including Maryland, Kentucky and California.

Mediterranean Food and Culture - NSD 452/652
In this course students explore the benefits of the Mediterranean eating patterns, cultures and lifestyle that are associated with longevity, lower rates of disease and a higher quality of life during. This is a spring semester followed by an eleven day immersion with travel to Italy to experience the foods, food production and rich culture of a Mediterranean country.,

In this role I reviewed and provided feedback to the author and publisher of Why Nutrition? an introductory nutrition textbook that I use for my Nutrition in Health Class, NSD 225. In addition, I authored testbank question for the Connect application, that accompanies the online text.

  • Registered Dietitian, Riina Education for Innovation Community Foundation funded grant, Syracuse, NY, I serve as the registered dietitian/nutritionist included in the Community Foundation Grant. In this role, I collaborate with Gail Riina, the Lutheran Chaplin at Hendricks Chapel and Director of Riina Education for Innovation Inc. to reduce lead poisoning in new Americans in Syracuse. The grant involves collaborating with Congolese Women Vision, Integrity, Action, Inc (COWVIA), to understand the impact of lead poisoning on their community and creating nutrition education workshops to reduce lead absorption by increasing the nutrient density of the diet. The purpose of this grant is to teach the members of COWVIA how to educate their community and other groups within the African diaspora on the role of nutrition in reducing lead poisoning, so they can share the message throughout Syracuse. To achieve this, I have had focus group meeting with COWVIA members, collaborated with the Onondago County Department of Public Health, the Medical Director of the Central/Eastern New York Lead Poisoning Resource Center, Families for Lead Freedom, Environmental Science faculty at ESF, Syracuse University Public Health faculty and WIC on understanding the reasons and extent of lead exposure and interventions. Using stakeholder input, I developed a nutrition curriculum to address the most essential information to increase nutrition literacy for the COWVIA members. We have started the community education sessions which require translation of materials into Swahili, Kinyarwanda, and French at community centers and have other sessions scheduled for 2024..
